Avocados contain lutein, a carotenoid which is a pigment that gives colors to fruits 

and vegetables. Lutein is an anti-oxidant which is responsible for keeping the skin 

and eyes healthy. 

Preparation time: 10 minutes. 

Serves: 4. 

Ingredients: 

•Medium white potato- 1 

•Mashed avocado- ½ 

•Natural yoghurt- 1/4th cup 

•Chopped fresh chives- 1 teaspoon 

Directions: 

Prick the potatoes, and bake them with their skins in the oven for about 1 and a half 

hours. 

Mix the yoghurt and the avocado. 

Split and cut the potato and cover with the avocado mixture. 

Garnish and sprinkle the chopped fresh chives. 

Let it cool before serving. 

The baked potatoes will be very soft and tender for the baby to eat so keep this tip 

in mind when making it for the baby.
